2023 Deep Sea "Seahorse" Sauvignon Blanc

Our Sauvignon Blanc has a rich golden hue and a round, vibrant profile. Aromas of citrus and brioche are followed by juicy fruit flavors of ripe pear, yellow apple, peach and nectarine. Subtle vanilla flavors from neutral French oak barrels soften the acidity, and aging sur lie enhanced the wine’s silky, complex finish.
*Sur lie (French for "on the lees") is a winemaking process where wine is aged in contact with its lees, which are the finished yeast cells and other sediment that remain after fermentation. This technique is most commonly used for white wines, like Chardonnay or Sauvignon Blanc, and sparkling wines.
Aging sur lie can enhance the wine’s complexity, texture, and flavor profile. It often imparts rich, creamy characteristics and notes of brioche, bread dough, or nuts. Wines aged sur lie may also develop a fuller body and a smoother mouthfeel due to the autolysis (breakdown) of the yeast cells, which release compounds that interact with the wine.
